250 g mascarpone
200 ml whipped cream
3 tablespoons sugar
100 g ladyfingers
6 cl vodka
300 g fresh strawberries
1 tbsp lemon juice
1 sachet of vanilla sugar
First prepare the strawberries: wash, chop and marinate with lemon juice and vanilla sugar – this ensures an intense aroma and a lovely fruity note.
While the berries are marinating, stir the mascarpone with sugar and vodka until creamy.
Beat the whipped cream until stiff and carefully fold in – this makes the cream wonderfully fluffy.
Now it’s time to layer: Dip the ladyfingers briefly in a mixture of vodka and a dash of water – they should be moist, but not soggy.
Then layer the ladyfingers, cream and strawberries alternately in glasses or a mold. The top layer should be cream so that the dessert looks nice and smooth.
Chill for at least two hours, preferably overnight.
Garnish with fresh strawberries and some mint when serving – and you have a summery dessert that tastes so light you’ll want a second helping.
